Vanilla Pizzelles

Ingredients:
3 Eggs
1 C. sugar
2 Tsp Vanilla Extract
1/4 lb butter (unsalted, melted and then cooled)
2 C. flour
2 Tsp baking powder
Special Equipment:
Pizzelle Iron
Directions:
Depending on how quickly your pizzelle iron heats up, you may have to start heating it before you make your dough, mine takes about 2 minutes, so I don't turn it on and preheat it until after my dough in made.
In a medium bowl beat your eggs and sugar. Add the extract and melted butter and mix. On low speed gradually add the flour and baking powder to make a sticky dough.
Once your pizzelle iron is hot, drop teaspoon sized portions onto the center of each pattern outline. Close the lid and allow to cook for 30-45 seconds, or until nicely browned.
Using a fork, carefully remove the hot cookie from the iron and place on a cooling rack. Lay them on a single layer on the cooling rack, once the cookies are cooled you can stack them.. and dust them with powdered sugar!!!
