I am in the Christmas spirit though.. which makes it very difficult for me to focus on my school work!! I rather be decorating a tree, making cookies.. or watching the grinch!!
Apple and Sausage Stuffing

Ingredients
6 tablespoons butter (plus some for buttering pan)
2 medium onions, (chopped)
2 stalks celery, (chopped)
Coarse salt and ground pepper
2 large Gala apples, (chopped)
1 1/2 bag of Pepperidge farm Herb Seasoned Stuffing bread cubes
1/4 cup coarsely chopped fresh sage
1 lb cooked sausage
1/2 bag chopped pecans (or 1 bag pecans, and no walnuts)
1/2 bag chopped walnuts
3 large eggs, lightly beaten
1 box of Progresso chicken broth
Directions
Butter an 9x13-inch baking dish; set aside.
In a large saucepan over medium heat, melt butter. Add your chopped onions and celery and season with salt and pepper. Cook until tender, stirring occasionally. Next add the apples and cook until they have softened.
In a large bowl (I used the insert to my 6 qt. crock pot) add your breadcrumbs, chopped sage, apple/celery/onion mixture, cooked sausage, nuts, and 3 large eggs - mix thoroughly.
Pour 3/4 of the broth into saucepan (same one used for apples and onions) and bring to a boil. Add half the broth to stuffing mixture and toss to combine. Continue adding broth and tossing just until stuffing is moistened but not wet. (I did not use all of the broth)
Spoon stuffing into prepared baking dish; cover with aluminum foil and refrigerate. When turkey is removed from oven, place covered baking dish in oven, and bake until warmed through, 30 minutes. Uncover and bake until golden, about 20 minutes more.
Everyone really liked this recipe!! Even the fellow, who doesn't like stuffing.. loved it!! I was very happy with it and look forward to make it again!!

Yeah, Christmas popped up from nowhere for me, too! We got our tree up and decorated today and it still seems too early for Christmas. And we LOVE the Grinch!
