Chocolate Chip Cookie recipe from! The directions said to roll into a ball and then bake them.. they were to flatten out.. Well, they didn't! It was a cookie fail! They were hard round chocolate balls. Not what I had expected. That was the last time I tried a Chocolate chocolate chip cookie recipe, until now!!
My fellow is a Chocolate chip cookie monster, and on top of that.. he is also a choco-holic!! So when he mentioned wanting some cookies the other night I took on the task of finding a new (read: better, delicious, wonderful) recipe!! I made my way to the Martha Stewart website.. she HAD to have a recipe.. and low and behold.. she did!!
Double Chocolate Chunk Cookies
(adapted from Martha Stewart)
Printer Friendly Version
1 cup all-purpose flour
1/2 cup unsweetened Dutch-process cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 ounces good-quality semisweet chocolate (4 ounces coarsely chopped, 6 ounces cut into 1/4-inch chunks)
1 stick (8 tablespoons) unsalted butter
1 1/2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
Preheat your oven to 325 degrees. Whisk together the flour, cocoa powder, baking soda, and salt in a bowl. In a double boiler melt the 4oz of coarsely chopped chocolate, once it is melted add the butter. Stir until melted.
Pour the chocolate mixture into the bowl of an electric mixer. Add the sugar. Temper the eggs and then add them and the vanilla. Using a Paddle attachment mix on medium speed until combined. Reduce speed to low and gradually mix in flour mixture. Once flour is Incorporated, remove from mixer and fold in chocolate chunks.
Using a 2 spoons, spoon your mixture onto your baking sheet, bake until cookies are flat and surfaces begin to crack, about 15 minutes. I made giant cookies, so I baked them for about 20 minutes.
These cookies are kind of a hybrid.. they have a crispy exterior and chewy interior.. similar to a brownie. The fellow was not impressed with these cookies (he likes a soft chewy cookies), but everyone at worked LOVED them!! I was asked for the recipe, and they were devoured!! I thought they had good flavor, being that they are crispy on the outside-I think they make a good dunking cookie!!
