Mushroom and Cream Cheese Frittata

2 Tbsp butter
1 1/2 C Mushrooms (sliced)
1 Red Pepper (chopped)
1 small Onion (chopped)
Dash of salt and pepper
1/2 C Cream cheese or yogurt cheese
fresh mozzarella cheese
Toss your salt, pepper, peppers, onions, and mushrooms in a pan with the butter.
Toss and cook on medium heat.
In a separate bowl mix your eggs and cream cheese.
Pour this mixture over the mushroom mixture.
Cover and cook until center is almost set. Add your slices of fresh mozzarella.
Turn on your broiler and place pan under it! Cook a few minutes to melt cheese.
Cut your frittata and enjoy!!
This is just one tasty way to eat your eggs!! How do you like your eggs?? typically I am a "Dippy Egg" kind of person.. But every now and then I crave an omelet, and this dish took care of that craving!!
