* Mushroom and Cream Cheese Fritata

A couple nights ago I decided to make "brinner" (you know, breakfast for dinner), Typically when I do this, I do the typical pancakes, home fries and bacon.. But I was feeling...Adventurous! I decided to make something I never made before. I made a Frittata! That word is just fun to say, and really it's just a fancy omelet.

Mushroom and Cream Cheese Frittata

Ingredients:
2 Tbsp butter
1 1/2 C Mushrooms (sliced)
1 Red Pepper (chopped)
1 small Onion (chopped)
Dash of salt and pepper
6 eggs
1/2 C Cream cheese or yogurt cheese
fresh mozzarella cheese

Directions:

Toss your salt, pepper, peppers, onions, and mushrooms in a pan with the butter. 
Toss and cook on medium heat.


In a separate bowl mix your eggs and cream cheese. 
Pour this mixture over the mushroom mixture.



Cover and cook until center is almost set. Add your slices of fresh mozzarella. 
Turn on your broiler and place pan under it! Cook a few minutes to melt cheese.


Cut your frittata and enjoy!!


This is just one tasty way to eat your eggs!! How do you like your eggs?? typically I am a "Dippy Egg" kind of person.. But every now and then I crave an omelet, and this dish took care of that craving!!

  3. What a delicious frittata! Love the cream cheese in it - that is one of my favorite ways to eat eggs - fried on a sandwich. The cream cheese gets all melty and gooey and so yummy!
